Applesauce Oatmeal Bars

It’s apple season making it the perfect time to try these vegan and gluten free applesauce oatmeal bars from the Rachlmansfield web site. Applesauce makes these bars naturally sweet, soft, and perfect for little hands. A pro nanny tip is that I make oat flour simply by adding oats to a food processor. These bars are easy to make, lunchbox-friendly, and a delicious way to sneak some wholesome oats into breakfast or snack time.

You Will Need:

1 cup unsweetened applesauce
1 cup oat milk (or any milk or any non-dairy milk for vegan)
2/3 cup creamy nut or seed butter
1 1/3 cup oat flour
1 1/2 cup rolled oats
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/2 cup chopped apple
Optional: 1/3 cup chopped pecans

What to Do:

1. Preheat oven to 350 degrees and grease an 8×8 or 9×9 baking dish
2. In a large bowl, mix together applesauce, nut butter, milk, flour, oats, baking powder and cinnamon then fold in apples and pecans if using
3. Add to baking dish and spread with a spatula so it is even across the dish
4. Bake in oven for 25-30 minutes or until ready
5. Slice into bars and enjoy!
