
This is a delicious chicken dinner that is bursting with amazing flavors by Daniela Apostolic from the My Gorgeous Recipes web site. The rice is cooked to perfection and chicken cooked in fragrant, but mild Indian spices are combined in one fantastic dish that everyone in the family can enjoy.
You Will Need:
2 chicken breasts
4 tomatoes
1 large onion
2 garlic cloves
2 ginger puree
3 tbsp vegetable oil
1 tsp salt
1/4 tsp ground black pepper
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/2 tsp cinnamon
1 tsp chilli flakes
1 cup plain yogurt
1 cup basmati rice
1 1/4 cup water
chopped coriander to garnish
1/2 tsp turmeric for the drizzle
1/4 cup milk
What to Do:
1. Dice the chicken breasts and transfer to a large bowl.
2. In a small bowl, combine the garam masala, cumin, ground coriander, turmeric, cinnamon and chilli flakes.
3. Add the spice mix to the yogurt, and mix well to get a paste.
4. Pour the paste over the chicken, and mix well — marinade for at least 1 hour, ideally overnight.
5. Rinse the rice under cold water until the water runs clear.
6. Add the rice to a pan together with the water — bring it to the boil and cook until the rice is nearly cooked, but it still holds its shape well and there is still water left.
7. Drain the water and set aside.
8. Cut the onion, garlic cloves and ginger, then heat up the oil in a pan and fry them until golden.
9. Chop the tomatoes and add them to the pan, they should be cooked for 3-4 minutes until mushy. Add the chicken, stirring well.
10. Leave to cook for 5 minutes, then add ½ cup of water or chicken broth.
11. Cover with a lid and leave it to cook until the liquid is absorbed.
12. Preheat the oven to 390 Fahrenheit.
13. In an oven-proof dish that has a lid, arrange one layer of rice, one layer of the cooked chicken and again one layer of rice.
14. Mix the turmeric with milk, then drizzle the mixture over the rice.
15. Cook in the oven with the lid on for about 20-30 minutes, the rice will become fluffy and fully cooked.
16. Carefully remove from the oven, and use a fork to gently mix the chicken and rice.
17. Garnish with chopped coriander.
