Chicken Salad with Grapes

Cooking for Kids

I used store bought rotisserie chicken to make this easy lunch for my Nanny Kids. But feel free to use any left over chicken to make this chicken salad. If the children don’t like celery or pecans just don’t add them to the recipe or replace the pecans with walnuts or other nuts the children prefer.

You Will Need:

4 cups cooked, chopped chicken
1 cup chopped celery
1 cup red seedless grapes halved
1/2 cup dried cherries
1/2 cup roasted pecans, chopped
1 cup mayonnaise or Greek yogurt
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 Kaiser or Portuguese rolls

What to Do:

Add chopped chicken to a large bowl along with celery, grapes, dried cherries, chopped pecans, mayonnaise or Greek yogurt, salt and pepper. Stir together until just combined. Serve on your favorite roll or bread.
