Shrimp and Avocado Salad

Salads make great lunches and dinners for hot summer days and evenings. Nothing is easier to make and it fills everyone up with plenty of protein and vegetables. Shrimp, avocado, tomato, and sweet onions with fresh squeezed lime juice, are really nice on a hot day. Add as much vegetables as you want. For example, I love avocado so I like serve one avocado per person and more tomatoes because my Nanny Kids love tomatoes.

You Will Need:

Baby Spinach (or any leafy greens the children like)
2-4 Avocados peeled, pitted, and sliced
2 Tomatoes, sliced
1 Sweet Onion, chopped
1-2 pounds cooked shrimp
1 pinch salt and pepper to taste
2 tablespoons lime juice
Mozzarella Cheese, shredded

What to Do:

Gently fold the baby spinach, avocados, tomatoes, onion, and shrimp in a large bowl. Season to taste with salt and pepper. Stir in lime juice. Sprinkle with mozzarella cheese if destined. Serve cold.
