Cooking with Kids
All children like helping bake a quick and easy treat. Have the kids help gather the ingredients, measure the ingredients, and mix the dough. These one-bowl oatmeal chocolate chip cookie bars are not only easy, but they’re also incredibly delicious. They are soft, chewy, and loaded with chocolate chips — everything bar cookies should be.
What to Do:
1 cup butter softened
1 cup firmly packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
2-3 cups chocolate chips
What to Do:
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, beat 1 cup butter until creamy.
3. Add brown sugar, granulated sugar and vanilla extract, and beat until creamy.
4. Add eggs, and beat well. Gradually mix in the flour, then add baking soda, sea salt and cinnamon, and mix well.
5. Stir in the oats, and mix until well combined, then stir in chocolate chips.
6. Line a 9 x 13-inch metal baking dish with parchment paper, or grease well, and press the cookie dough evenly into the pan.
7. Bake for 20 to 25 minutes, or until the corners start to turn golden brown and the a toothpick inserted into the center is mostly clean. Baking time may vary depending on your oven.
8. Remove pan from oven, allow to cool, then lift parchment paper out of pan, and slice into squares.
