Valentine’s Day Breakfast
The easiest way to make strawberry waffles is to use a waffle mix and add diced strawberries to the mixture before cooking the waffles. But if you have time, making this waffle recipe I found on the insidebruceewlife.com web site tastes even better. I added a few drops of red food coloring and I used a big and a small heart-shaped cookie cutters to cut the waffles into hearts after I baked them for Valentine’s Day.
You Will Need:
2 cups All-Purpose Flour
1/2 teaspoon Salt
1/2 teaspoon Baking Soda
1/4 cup Granulated Sugar
2 Eggs, whisked
1 1/2 cups Half & Half
1/4 cup Butter, melted
1 cup Diced Strawberries
For Garnish:
Powdered Sugar
Extra Strawberries
Whipped Cream
What to Do:
1. Preheat the waffle iron.
2. Stir together the flour, salt, baking soda, and sugar.
3. Whisk together the eggs, half and half, butter, and extract.
4. Create a well in the center of the dry ingredients and pour in the egg mixture. Use a fork to stir everything together. Do not over mix the batter.
5. Stir in the diced strawberries gently.
6. Spray the waffle iron with nonstick spray and drop large spoonfuls of batter onto the heated iron. Cook the batter for 4 minutes or until the waffles are golden brown. Remove from the waffle iron with a fork.
7. I put the waffles on a cutting board and used heart-shaped cookie cutters to shape the waffles.
8. Serve the warm waffles with fresh strawberries, powdered sugar, and/or whipped cream.
