Pancake Breakfast Shish Kabobs

Breakfast is more fun on a stick! These Mini Pancake Breakfast Shish Kabobs are an easy, hands-on recipe that lets children build their own colorful breakfast using mini pancakes, fresh strawberries, banana slices, and blueberries. It’s a simple way to encourage independence, practice fine motor skills, and make mealtime feel like a special treat. Just be sure to use age-appropriate skewers and supervise young children while they assemble their tasty creations.

You Will Need:

Bowl
Mixing Spoon
Whisk
Sifter or Mesh Strainer
Skillet
Spatula
Platter
Kid-Friendly Skewers
1 Egg
1 ¼ cups (300ml) Milk
1 cup (125g) All-Purpose Flour
1 teaspoon Baking Powder
Butter and/or Spray Oil
Strawberries, Blueberries, and Bananas
Optional: Maple Syrup or Powdered Sugar

What to Do:

1. Wash the berries, hull and slice the strawberries, and peel and slice the bananas.

2. Whisk the egg and milk together in a mixing bowl. Sift in the flour, add the baking soda, and gently mix the ingredients to combine.

3. Heat the oil and/or melt butter in a skillet over a medium heat.

4. Add teaspoonfuls of the pancake mix and cook until bubbles form and the bottom of pancakes are browned.

5. Flip and cook the other side.

6. Repeat, using up the pancake batter.

7. Allow the children to alternate pancakes and fruit on sticks.

8. Serve with a little maple syrup or powdered sugar if desired.
