These Earth Day pancakes are a fun, hands-on way for kids to mix, measure, and create, whether you’re making them from scratch from the recipe below or using your favorite mix. Inspired by a fun idea from Brightly Learning on Pinterest. I have found it’s best to cook the pancakes really slowly to allow the earth pancake look blue and green and not brown. If you cook the pancakes quickly they will brown.
You Will Need:
Equipment
2 Mixing Bowls
Measuring Cups and Spoons
Sifter
Mixing Spoons
Squirt Bottle, Piping Bag, Ziploc Bag, or Spoon to Drizzle
Griddle
Spatula
Cutting Board
Circle Cookie Cutter
Ingredients
3 Cups All Purpose Flour
7 teaspoons Baking Powder
2 Tablespoons Sugar
1/2 teaspoons Salt
2 1/2 Cups Milk
6 Tablespoons Butter, Melted
2 Large Eggs
Blue and Green Food Coloring
Cooking Spray
Maple Syrup or Powdered Sugar (optional)
What to Do:
1. Sift flour, baking powder, sugar, and salt together in a large bowl. Make a well in the center and add milk, melted butter, and egg; mix until smooth.
2. Pour about 1/4 of the batter into a separate bowl.
3. Add several drops of blue food coloring to the bowl with 3/4 of the pancake batter and mix until color is blended. Add few drops of green food coloring to the bowl with a smaller amount of batter.
4. Pour green batter into a squirt bottle, piping bag, Ziploc bag with a corner cut out, or just use a spoon to drizzle the green batter when ready to cook the pancakes.
5. Spray a griddle heated to medium with cooking spray. Pour 1/4 to 1/2 cup blue pancake batter onto circle on your griddle.
6. Using a squirt bottle, piping bag, a Ziploc bag with the corner cut off, or a spoon, drizzle or squeeze green pancake batter on top of the blue circle to create your earth design.
7. When the pancake begins to bubble, flip it with a spatula and cook on low and very slow so the side of the pancake with blue and green batter doesn’t brown.
8. Remove the pancake from the griddle with a spatula and place on a cutting board. Use a round cookie cutter to make a perfectly circle earth shaped pancake.
9. Serve with maple syrup or powdered sugar if desired.
