Pulled Pork Stuffed Sweet Potato

An 8-year-old I care for loves sweet potatoes. Since her family had a pack of shredded barbecue pork in their freezer I tried serving the pork on a sweet potato. She loved it. I baked the potato while she was in school and simply reheated the potato right before serving. Her parents ate the extra potatoes. Here’s what I did:

You Will Need:

3 Large Sweet Potatoes
1 Package Shredded Pork with Barbecue Sauce
1 (10 oz) Can Dice Tomatoes
3 T. Butter
1/4 t Salt
1/3 Cup Sour Cream
Fresh Parsley
Pam Vegetable Spray

What to Do:

1. Preheat oven to 400 F degrees. Cover a baking sheet with aluminum foil. Spray with a vegetable oil spray like Pam.

2. Wash sweet potatoes well. Poke top of potatoes with a fork. Put in preheated oven. Bake for 30 minutes. Then turn the potatoes 180 degrees and cook another 30 minutes.

3. In medium bowl combine pork and tomatoes. Microwave for 2 to 3 minutes until mixture is hot.

4. Carefully cut off top each potato. Fluff with a fork. Top each potato with butter and some salt.

6. Place about 1/3 cup of pork mixture on top each potato. Top with sour cream and sprinkle with fresh parsley.
