Red Pepper Sauce

My Mom Boss asked me to make this recipe. It is so super easy to make and so delicious. If someone in your nanny family cannot consume tomatoes this red pepper sauce is a great alternative to marinara sauce. We served it on pasta for the kids but the sauce good over steak, grilled polenta, poultry, lamb, or grilled seafood.

You Will Need:

4 red bell peppers, seeded, deribbed and chopped
1/4 cup extra virgin olive oil
Salt and freshly ground black pepper

What to Do:

1. Heat the olive oil in a saucepan, add the peppers, cover and simmer over very low heat, for about 20 minutes or until tender.

2. Puree the cooked peppers through a food mill to remove the skins.

3. Season to taste with salt and pepper.
