Pesto Cheese Melt Sandwiches

Children love helping make meals. If you care for a finicky eater it helps to include them in making their meals. They will eat what they prepare themselves. An 8-year-old I care for made these open faced sandwiches for her entire family. Use your favorite vegetables and cheese — whatever the members of your Nanny Family prefer. Here is what we used:

You Will Need:

Crusty Artisan Bread
Favorite Mayonnaise
Favorite Pesto
Fresh Baby Spinach
Roasted Red Peppers
Sliced Tomatoes
Provolone Cheese

What to Do:

1. Preheat the oven to 400 F degrees. Put parchment paper on a baking sheet.

2. Allow the child to spread mayonnaise and pesto sauce on a slice of bread.

3. Allow them to later the vegetables in the bread. Top with slices of cheese.

4. Put in oven until the cheese melts or until the cheese is bubbly and brown.
