
My Nanny Kids love loaded mashed potatoes. This side dish has all their favorite potato toppings mixed right into the mashed potatoes. Feel free to mix in some sour cream to make these mashed potatoes even creamier and loaded with flavor.
You Will Need:
2 pounds (about 2 to 3 large) russet potatoes, peeled, cut into eighths
1 tablespoon salt
2 tablespoons butter
1/2 cup sliced green onions
1 teaspoon finely chopped fresh garlic
1/2 cup milk
3 to 4 strips (1/3 cup) cooked bacon, chopped
1/2 cup shredded sharp Cheddar cheese
What to Do:
1. Place potatoes in 3-quart saucepan. Add water to cover; bring to a boil over high heat.
2. Reduce heat to medium. Add 1 tablespoon salt; cook 10-15 minutes or until potatoes are tender. Drain.
3. Melt butter in same saucepan over medium heat until sizzling. Add green onions and garlic; cook 2-3 minutes or until slightly softened.
4. Add drained potatoes and 1/2 cup milk; mash until smooth. Stir in bacon and cheese, saving a little bit of cheese and bacon to sprinkle on the top of the casserole.
5. Put mashed potato mixture into a casserole dish. I usually sprinkle a little bacon and cheese on top of the casserole.
