
You can’t go wrong serving kids pasta. They always gobble it up. I always hide some veggies in the meat sauce sauce. You can use ground veal, turkey, or Beyond Burger instead of beef if your Nanny Family prefers. Using store bought marinara sauce makes this a quick and easy lunch or dinner. This recipe is for a large family with teenage boys. Cut the ingredients in half if cooking for a smaller family.
You Will Need:
2 (1-pound) boxes pasta shells
2 tablespoons olive oil
2 pounds ground beef
1 medium onion, chopped
3 carrots, shredded and chopped
1 zucchini, shredded and chopped
9 ounces (1-1/8 cups) marinara sauce
3 to 4 garlic cloves, chopped
1/4 cup chopped fresh parsley
1/4 teaspoon black pepper and pinch of salt
What to Do:
1. Cook pasta according to package directions.
2. Meanwhile, heat olive oil in a sauté pan and cook meat until brown. Add onions and mix, cooking for two to three minutes.
3. Add carrots, zucchini, marinara sauce, minced garlic, dill, parsley, garlic powder, pepper, and salt. Cook over a medium flame for one hour, stirring occasionally.
4. To serve, mix together pasta and meat sauce.
