
I bought the most juicy peaches at the farmer’s market this weekend. I have been making as many recipes as possible with the peaches. I knew it might be a crazy idea but making pizza with peaches turned out great. I just used store bought pizza dough to make this yummy pizza made with peaches, ricotta, and balsamic reduction. You Will Need:
Fresh Pizza Dough
1/2 Cup Balsamic Vinegar
1 Tablespoon Extra-Virgin Olive Oil
1 to 1-1/2 Cup Part-Skim Ricotta Cheese
2 – 3 Peaches, Sliced Thin
What to Do:
1. Preheat oven to 450 F degrees and let the pizza dough come to room temperature.
2. Place balsamic vinegar in a small saucepan over medium-high heat. Cook until reduced by half, 8-10 minutes. Set aside to cool. Be careful to not let it burn.
3. Stretch pizza dough onto a baking sheet or pizza stone.
4. Brush pizza dough with olive oil, then dot ricotta over the dough’s surface. Using an off-set spatula or knife, spread ricotta into an even layer. Top with peach slices.
5. Bake 10-15 minutes, until the crust is golden and slightly blistered. Remove from oven, drizzle with balsamic reduction, and enjoy immediately.
