Peach, Ricotta, Balsamic Pizza

I bought the most juicy peaches at the farmer’s market this weekend. I have been making as many recipes as possible with the peaches. I knew it might be a crazy idea but making pizza with peaches turned out great. I just used store bought pizza dough to make this yummy pizza made with peaches, ricotta, and balsamic reduction. Don’t forget to visit my storefront to buy all the kitchen supplies needed to cook for your Nanny Family.

You Will Need:

Fresh Pizza Dough
1/2 Cup Balsamic Vinegar
1 Tablespoon Extra-Virgin Olive Oil
1 to 1-1/2 Cup Part-Skim Ricotta Cheese
2 – 3 Peaches, Sliced Thin

What to Do:

1. Preheat oven to 450 F degrees and let the pizza dough come to room temperature.

2. Place balsamic vinegar in a small saucepan over medium-high heat. Cook until reduced by half, 8-10 minutes. Set aside to cool. Be careful to not let it burn.

3. Stretch pizza dough onto a baking sheet or pizza stone.

4. Brush pizza dough with olive oil, then dot ricotta over the dough’s surface. Using an off-set spatula or knife, spread ricotta into an even layer. Top with peach slices.

5. Bake 10-15 minutes, until the crust is golden and slightly blistered. Remove from oven, drizzle with balsamic reduction, and enjoy immediately.
