Air Fried Parmesan Zucchini

Air Fryer zucchini chips are a crunchy low carb snacks that are much healthier than deep fried but have the same great texture and taste. I personally don’t bother using bread crumbs at all like most people do. When using the air fryer the Parmesan cheese becomes golden and crispy on the outside, while the zucchini remains moist inside.

You Will Need:

2 Medium to Large Zucchinis Cut into 1/2″ Pieces
1-2 Cups of Parmesan Cheese, Shredded
1 teaspoon Old Bay Seasoning
1 Egg, Whisked
Olive Oil Spray
Air Fryer

What to Do:

1. Cut off the ends of the zucchini and slice into 1/2″ dials. The thinner they are the crispier they will get so experiment with the thickness you prefer. I use a mandolin to slice the zucchini.

2. Preheat the air fryer to 350 degrees (takes about 5 minutes for my air fryer).

3. In a bowl whisk the egg. Add Old Bay seasoning to the eggs.

4. Put the shredded Parmesan cheese on a plate.

5. Dip zucchini pieces one at a time into egg, then coat with cheese.

6. Spray air fryer with olive oil spray and when air fryer is preheated add the zucchini to the tray without overlapping.

7. Spray zucchini pieces that aren’t overlapping with olive oil.

8. Cook in air fryer at 350 degrees for 13 minutes total, flipping after minute 10 minutes. Cook longer for more crispy pieces.

9. Repeat until all zucchini is finished cooking.

10. Serve immediately.
