Cooking for Families
It’s officially holiday season and serving duck is the most impressive dish. Serving turkey is too much for many families to serve for Thanksgiving so duck is a great substitute. You can carve the duck into small slices but the boys in my Nanny Family love it so much I just serve them each half a duck.
You Will Need:
5 pound duck
2 Tbsp olive oil
1 Tbsp garlic powder
1 tsp thyme
1 tsp rosemary
1 tsp parsley
1 tsp sea salt
1/2 lemon juiced
3 sprigs fresh thyme, rosemary for garnish
6 slices lemon for garnish
What to Do:
1. Preheat the oven to 350 degrees.
2. Wash the duck, pat dry and salt. Mix the olive oil, spices and lemon juice together to form a paste.
3. Rub the paste all over the duck. Take the rest of the squeezed lemon and put it inside the duck cavity.
4. Place the duck in a roasting pan and add 1/2 a cup of water.
5. Cook for approximately 120 minutes, basting the duck every 30 minutes. The duck is done when the juices run clear and its golden brown.
6. Remove from the oven and let cool for 10-15 minutes. Slice and serve immediately. Garnish with fresh thyme and rosemary, pan juices, and lemon slices.
