Disney “Dole Whip”

img_4658-1Cooking for Families

This is a refreshing, light, low calorie, and low-fat dessert your whole Nanny Family will enjoy during the summer months. If you love Dole Whip (a Disney Park fan’s favorite frozen treat), you’ll love this super-refreshing, dairy-free dessert with the texture of soft serve found on the epicurious web site. You will get best results by using a food processor, but if you don’t have one just use a blender.

You Will Need:

4 cups frozen pineapple chunks
1 cup canned unsweetened coconut milk
1 frozen banana
Pinch of kosher salt
4 fresh pineapple wedges (optional)

What to Do:

Process frozen pineapple, coconut milk, banana, and salt in a food processor until very smooth. Divide among glasses or cups and garnish with pineapple wedges, if using.
