Spooktacular Mummy, Ghost & Jack-O’-Lantern Quesadillas

Make lunchtime a little spooky with these cheesy Halloween quesadillas! With just tortillas and shredded cheese, kids can help create silly ghosts, wrapped-up mummies, and grinning jack-o’-lanterns. Invite children to invent their own spooky faces. We should always supervise little helpers in the kitchen., but for younger children, we should handle cutting and baking ourselves. This is an easy, hands-on cooking activity that encourages creativity while making lunch extra fun.

You Will Need:

Flour Tortillas
Mexican or Cheddar Shredded Cheese
Olives (for mummy eyes)
Mini Cookie Cutters, Kitchen Scissors, Paring Knife
Baking Sheets
Optional: Serve with salsa, guacamole, avocados, and sour cream

What to Do:

1. Cut half of the tortillas with shapes using mini cookie cutters, kitchen scissors, and/or a paring knife to make Halloween shapes below.

Jack-o’-Lanterns: Cut tortillas into pumpkin shapes. Add triangle eyes and a mouth.

Mummies: Cut tortillas into circles and layer thin tortilla strips across the top, leaving space for olives for the eyes.

Ghosts: Cut tortillas into ghost shapes and cut out eyes and a mouth.

2. Place each tortilla shape over shredded cheese on a baking sheet. Bake at 375°F until the cheese melts and the tortillas are lightly golden, about 5–8 minutes. Check frequently and adjust as needed.

3. Let the quesadillas cool before serving.

I’m not sure where I got this recipe idea decades ago but I recommend baking these rather than using a skillet. The final shape looks much better when baked.
