Pumpkin Waffles

October means pumpkin patches, crisp fall days, and pumpkin everything! Turn that autumn favorite into a kid-approved breakfast with these delicious pumpkin waffles. It’s a tasty way to bring a little pumpkin patch magic to the breakfast table for the children in your care.

You Will Need:

2 ¼ cup all-purpose flour
2 cups milk whole or 2%
15 oz pumpkin puree 1 can, 100% pure pumpkin (not pie filling)
¼ cup butter melted and slightly cooled
¼ cup sugar
2 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
Optional: Maple syrup or dusting of powdered sugar for serving.

What to Do:

1. In a large bowl, whisk together the pumpkin puree, milk, melted butter, and sugar until smooth and well combined.

2. Add the flour, baking powder, baking soda, cinnamon, and salt to the same bowl. Whisk just until no dry streaks of flour remain; a few small lumps are fine. Don’t overmix.

3. Preheat your waffle iron on medium-high heat and lightly coat the plates with nonstick cooking spray.

4. Pour about ⅓ cup of batter into the center of the iron (or the amount your waffle maker’s instructions recommend), close the lid, and cook for 3 to 4 minutes, until the waffle is golden brown and the steam has mostly stopped.

5. Transfer the waffle to a wire rack, or to a baking sheet in a 200°F oven to keep warm. Lightly re-grease the iron and repeat with the remaining batter.

6. Serve warm with maple syrup or a dusting of powdered sugar if you choose.
