
This is a kid-friendly vegetarian Portobello Soba Noodle Salad that’s packed with flavor, colorful veggies, and slurp-worthy noodles kids will love! A mother I worked for taught me how she makes this meal without a recipe written down. The measurements for the ingredients are estimates. It is a delicious way for kids to enjoy greens!

You Will Need:
1 lb Spring Mix Blend of Lettuce
1 lb Soba Noodles
4 Large Portobello Mushrooms
2 Cups Edamame (shelled frozen)
Dressing:
1/4 Cup Avocado Oil
1/4 Cup Rice Vinegar
1/8 Cup Soy Sauce
1 T. Sesame Oil
1 t. Sea Salt
What to Do:
1. Prepare the soba noodles as described on package.
2. Cook the edamame in the microwave.
3. Clean and slice the portobello mushrooms about 3/4 inch thick. Add a tiny bit of avocado oil to a large skillet and cook the mushroom slices. Drain off water.
4. Blend the dressing ingredients in a small bowl.
5. Put the lettuce in a large bowl. Add the cooked mushrooms, noodles, edamame to the bowl.
6. Drizzle the dressing on the entire salad.
