Chinese Ribs with Soybeans Soup

With Rice

Kids always love their Grandmother’s recipes and this soup was no exception. Using a pressure cooker made it quick and easy to make. We added left over cauliflower to the soup to warm up at the end of cooking, then served the soup over white rice. I hope your Nanny Family enjoys this Asian soup as much as mine did.

You Will Need:

2 Pounds Baby Back Ribs or Pork Spare Ribs
250 grams Soy Beans
4 T Soy Sauce
2 T Asian White Cooking Wine
1 T Brown Sugar
1 Clove Star Anise

What to Do:

1. Soak soy beans for at least 4 hours.

2. Salt the pork.

3. Add the soy beans to the pressure cooker.

4. Cut the ribs and place on top of the soy beans.

5. Add cooking wine, soy sauce, sugar, and the star anise to the pressure cooker.

6. Add water to almost cover the ribs.

7. Cook under pressure cooker to cook for 15 minutes.

8. Remove the cover and let it simmer for another 10 minutes to condense the soup.

9. Serve with white rice and any left over vegetable you like.
