
Crepes make a fancy breakfast for Mother’s Day. Prepare the batter with the kids the day before to let the batter sit in the fridge overnight. Whisk it again really well right before making the crepes. You can make crepes in a skillet but it’s even easier using a crepe maker. You Will Need:
4 Eggs
1 1/3 Cups Milk
2 T. Unsalted Butter
1 Cup All-Purpose Flour
1/2 t. Salt
Berries, Whipped Cream, Jams, Nutella, Powdered Sugar, or Fillings or Topping of Choice
Crepe Maker or Skillet
What to Do:
1. Heat the milk and butter in a pot on the stovetop over low heat until the butter is just melted. Let cool until room temperature.
2. In a medium bowl whisk the eggs and flour together until smooth. The texture will be very thick.
3. Gradually add the milk mixture into the flour and egg batter. Whisk and incorporate the milk slowly.
4. Cover batter with plastic wrap and keep in the fridge overnight.
5. Heat the crepe maker or non stick skillet. Whisk the batter again to make sure ingredients are well incorporated and the batter is smooth. Follow the directions of the crepe maker and measure the appropriate amount of batter for each crepe.
6. I heated a pan on the stove and heated each crepe adding Nutella to the middle of each crepe. Then I folded them in fours (see above). I added sweet cheese to some and folded into thirds (see below). Serve with toppings as desired.
