Kid-Friendly Stuffed Bell Peppers

Bell peppers come in green, red, orange, and yellow and my Nanny Kids love all of them. You can replace the beef with ground turkey or Beyond Beef plant-based ground beef to make this stuffed bell pepper recipe.

You Will Need:

4 bell peppers (red or green)

1 pound of ground beef

1 cup of Monterey jack cheese

1 cup of canned corn

1 cup of cooked rice

1 teaspoon of cumin

1 tablespoon of olive oil

What to Do:

1. Cut the top off of the bell peppers
2. Cook the rice per the package ingredients
3. On the stove top, heat the oil then add the ground beef, and cook until well done
4. Add the corn, cumin, rice and cheese to the beef mixture and cook well
5. Take the mixture and stuff the bell peppers
6. Cook in a 350 degree oven for 10-15 minutes
7. Serve warm with a salad
