This mango salsa recipe is quick and easy to make, and always so fresh and delicious. Adjust the ingredients to what you like most. Choose as many ripe, sweet, fresh mangoes and juicy, red tomatoes that you like. One of my Nanny Kids added feta cheese to the mango salsa and we all loved it. Sprinkle on as much as you like.
You Will Need:
4-5 Fresh Mangoes, ripe and diced to your desired size
2-4 Tomatoes, diced
1 Red Onion, peeled and finely diced
Fresh Cilantro, finely-chopped
Fresh Lime
Jalapeño (optional), for a milder salsa use one pepper, seeded, and diced. For a spicier salsa, feel free to add two peppers.
Feta Cheese (optional), sprinkle to taste
What to Do:
1. Prep all of your ingredients: The size of your dice is totally up to you. So feel free to make your salsa as chunky or finely-chopped as you prefer.
2. Combine ingredients: Toss everything together in a mixing bowl until evenly combined.
3. Taste and season: Feel free to add in some salt and pepper here, or also add in extra lime juice, cilantro, and feta cheese if desired.
4. Enjoy immediately or refrigerate in a sealed container for up to 2 days.
