Cooking for Families
I love that my local grocery store sells pork tenderloin that is already marinated. I made this recipe for a big family after picking up some marinated teriyaki pork tenderloin and some veggies at the store. If you cannot find marinated pork tenderloin just use the sauce recipe below and marinate the pork tenderloin prior to cooking. The amounts to use in the recipe below are just my “guesstimates” as I just figured out what to add as I prepared this easy dinner.
You Will Need:
Sauce:
1T. Rice Wine Vinegar
1/2 Cup Soy Sauce
2 t. Sesame Oil
1/4 Cup Brown Sugar
3 Cloves Garlic (minced)
1tsp. Ginger
2 Pork Tenderloins (already marinated in teriyaki sauce)
1 T. Cooking Oil
1/2 Onion
Head of Broccoli
2 Carrots
1 or 2 Red Bell Peppers
1/2 Cup Green Onion
30 oz Udon Noodles
What to Do:
1. Cut the pork into bite sized strips.
2. Cut the broccoli into bite sized pieces. Cut the carrots and red peppers into matchsticks. Slice the onion. Keep the vegetables separate to cook them at different times.
3. Heat 1 T. oil to a hot wok or skillet. Add pork to skillet and cook until browned and cooked through.
4. Add broccoli to the wok and cook until dark green and just starting to get tender.
5. Add carrots to the pan with the broccoli and cook for about 2 minutes.
6. Add red pepper and onion and cook for about a minute.
7. Add sauce and boil for a minute and then add udon noodles and cook until hot and well coated in sauce.
8. Add pork back into wok and mix all ingredients until hot.
