Cooking for Kids
This is an absolutely delicious carrot dish that tastes more like a dessert than a side dish. Soufflés usually are difficult to make but this is a super simple recipe. I know using vegetables as a dessert sounds crazy, but I promise you and the children will be pleasantly surprised by this delicious carrot recipe I found at geniuskitchen.com.
You Will Need:
1 3⁄4 lbs peeled carrots
3⁄4 cup sugar
1 1⁄2 teaspoons baking powder
1 1⁄2 teaspoons vanilla
2 tablespoons flour
3 eggs
1⁄4 lb margarine, softened
powdered sugar
What to Do:
1. Steam or boil carrots til extra soft and drain well.
2. While carrots are warm, add sugar, baking powder and vanilla. Whip with mixer til smooth.
3. Add flour and mix well.
4. Whip eggs separately and add to mixture, blending well.
5. Add margarine and blend well.
6. Pour mixture into baking dish about half the way full because the souffle will rise.
7. Bake at 350 about 1 hour or until top is light brown. Sprinkle lightly with powdered sugar before serving.
Can this be made with butter instead of margarine?
Sure
Actually my nanny family only has butter (not margarine) so I used butter, not margarine.
