Cooking for Kids
When the weather turns cold no dinner makes the kids feel warmer than a good old fashioned pot roast like my grandmother used to make. I love using the slow cooker so the house smells of the delicious dinner as it cooks. Here’s my easy recipe:
You Will Need:
• 5 Potatoes cut into chunks or at least a pound of mini golden potatoes
• 1 Onion cut into chunks
• 4 Carrots cut into chunk
• 2 Celery Stalks
• 2 cups Beef Stock or broth
• 2 cups Water
• 1/2 tsp Garlic Powder
• 1/2 tsp Onion Powder
• 1/2 tsp Italian Seasoning
• 1/4 tsp Salt
• 1/4 tsp Pepper
What to Do:
1. Cut the potatoes, carrots, celery, and onions into large 2-inch chunks to ensure they don’t turn to mush in the crock pot.
2. Add the beef to the crock pot, then the potatoes and onions and carrots.
3. Add the seasonings to the top.
4. Add the beef stock and water.
5. Cook about 5 hours on high or 10 hours on low. You will know it is done when you put a fork in it and it just falls apart.
6. Once it is done remove the roast, potatoes, onions, and carrots from the crock pot and enjoy.
7. Pour the juices over the roast or make a gravy by boiling the juices while adding one tablespoon of floor at a time until perfect consistency.
