Easy Apple Cake

It’s apple harvest time and no better time to pick and serve a terrific variety of apples with the kids. Here is an easy apple cake we found at ehow.com to make with the children. Serve it warm or at room temperature with a dollop of whipped cream or ice cream.

You Will Need:

1 1/4 cup vegetable oil
2 teaspoons vanilla
3 1/2 cups peeled, diced apples
2 eggs
2 cups sugar
3 cups flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt

What to Do:

1. Preheat the oven to 350 degrees Fahrenheit.

2. Lightly grease a 9- by 13-inch baking pan or glass dish. Set aside.

3. Combine the oil, vanilla and diced apples in a medium bowl. Set aside.

4. In another bowl, beat the eggs and add the sugar. Mix well and add it to the apple mixture.

5. Stir in the flour, baking soda, cinnamon and salt. Add nuts, if desired. Mix all ingredients.

6. Pour the batter into the greased pan or pie dish. Bake for approximately 40 minutes, or until golden brown on top and an inserted toothpick comes out clean. Let the cake in the pan for about an hour before serving.

Tip: Allow to cool and don’t serve too soon or cake will fall apart.
