You Will Need:
Box Grater
Bowl
Sieve or Cheese Cloth
Tablespoon Sized ice Cream Scoop
Baking Sheet
Parchment Paper
1 cup finely grated carrots
⅓ cup grated cheese
¼ cup panko breadcrumbs
1 egg
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp salt (optional)
¼ tsp black pepper (optional)
What to Do:
1. Preheat the oven to 400 degrees F (204 degrees C).
2. Shred the carrots using the smallest size hole on a box grater.
3. Place the carrots in a sieve and use the back of a spoon to press down on it to remove the moisture. Or simply use your hands or a towel to squeeze out as much moisture from the carrots as possible.
4. Add the carrots to a bowl along with the other ingredients. Mix well until combined.
5. Scoop out tablespoon-sized portions and roll them into small balls. Place the balls onto a parchment paper-lined pan.
6. Bake for 15 minutes or until the edges are starting to turn slightly brown.
