Cheddar and Broccoli Egg Bites

For a healthy and quick breakfast and snack I often make these easy broccoli and cheddar egg bites for the kids. The children love help making this simple breakfast after school, eating one or two as a snack, and then storing them in the fridge to have with breakfast the next day.

You Will Need:

7 eggs
1/4 cup whole or 2% milk
1/4 teaspoon salt
Pinch of black pepper
1 cup chopped broccoli
1/2 cup shredded sharp cheddar cheese

What to Do:

1. Preheat oven to 350°F (175°C). Heavily grease a 12-cup muffin tin with nonstick spray, or use silicone liners to prevent sticking.

2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined and smooth.

3. Stir in the shredded cheddar cheese and finely chopped broccoli.

4. Pour the mixture evenly into the muffin cups, filling each about 3/4 full to allow room to rise.

5. Bake for 20–25 minutes, or until the egg bites are set, firm, and lightly golden on top.

6. Allow to cool in the tin for 5 minutes before removing.

Tip: Reheat the next morning in a microwave for 30-40 seconds.
