Pressure Cooker Cider Roasted Acorn Squash

The children in my care always enjoy trying a new fruit or vegetable. Autumn is the perfect time to try acorn squash. The children in my care loved the sweet topping on this acorn squash. This recipe makes a nice dish for a Thanksgiving celebration as well. 

You Will Need:

1 acorn squash
1/2 cup apple cider or apple juice
1 tablespoon butter
1 1/2 tablespoons coconut sugar
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
sea salt, to taste

What to Do:

1. Set the over to 375F.

2. Slice each squash crosswise in half, and discard the seeds.

3. Place the steamer rack in your pressure cooker. Add apple cider (or juice) and 1/2 cup of water and then place acorn squash halves on the steamer rack with the cut side up.

4. Close and lock the lid and cook at high pressure for 8 minutes. Use the quick pressure release.

5. Carefully remove squash from the pressure cooker and place them in a baking dish. Brush the cut sides with butter.

6. Combine the sugar, cinnamon, cloves, and salt. Sprinkle evenly on the acorn squash. 

7. Bake in the oven for 5 minutes or the squash is tender. 

 8. Remove from oven and serve.
