Poached Cod in Tomato Sauce

Here is an easy fish recipe that kids really like that I found on the Nom Nom Paleo web site. Even the child that I care for that is a picky eater loves this fish recipe. I served it with sautéed vegetables and steamed rice but it would be great served on, or beside, pasta as well.

You Will Need:

1 1/2 pounds cod fillets
2 cups marinara sauce, or salsa
2 tablespoons chives
2 tablespoons flat-leaf parsley
coarse sea salt, to taste
ground black pepper, to taste

What to Do:

1. Blot cod with paper towels and sprinkle both sides with salt.

2. Grab a skillet with a lid that is large enough to fit the fillets

snugly in a single layer. Pour in marinara sauce.

3. Crank the heat up to high to bring the sauce to a boil. When the sauce is bubbling, carefully slip in the seasoned fillets.

4. Lower the heat to about medium-low, enough to maintain a simmer. Cover the pan and cook for 5-8 minutes, or until fish is opaque and cooked to your preferred doneness. The fish is cooked through when a meat thermometer is inserted and reads 145F.

5. Meanwhile, chop fresh herbs.

6. Top the fish with freshly cracked black pepper and a shower of fresh herbs.
