Simple Egg Drop Soup

It is still winter and some have just had another huge snowstorm this week. The kiddos I care for love having a big bowl of egg drop soup after a fun and tiring day of playing in the snow. This soup recipe is so simple and can be enjoyed anytime of the year. 

You Will Need:

4 cups chicken stock
1 tablespoon cornstarch
1 tablespoon soy sauce
1/4 teaspoon white pepper
3 large eggs, lightly beaten

What to Do:

  1. Mix 1/2 cup of the stock with the cornstarch until dissolved.
  2. Place the remaining chicken stock, soy sauce, and white pepper in the pot and bring to a boil.
  3. Stir in the cornstarch slurry and reduce the heat to a simmer.
  4. Slowly pour in the beaten eggs while stirring the soup slowly. The egg will spread out into ribbons.
  5. Turn off the heat and serve.
