Savory Scallion Pancakes 

For Chinese New Year I love making my Nanny Kids this super easy scallion pancake recipe to be served with dinner or snacks like a flat bread. My former Mom Boss gave me this recipe from her mother’s recipe box. I assure you your family and your Nanny Family will love these crispy-on-the-outside, chewy-on-the-inside flatbreads filled with minced scallions any time of the year. I triple and quadruple the recipe each time I make it because they are so good. 

You Will Need:

3/4 cup milk
3/4 cup all-purpose flour
1 egg
1/2 cup scallions
2 tablespoons water
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 teaspoons sesame oil

What to Do:

  1. Combine milk, flour, egg, scallions, water, baking powder, salt, and ground ginger in a bowl. Mix until batter is smooth.
  2. Heat oil in a skillet over medium heat. Pour batter into the skillet to make 4 pancakes. Cook until bubbly, about 2 minutes. Flip and cook until desired brownness is reached, about 1 minute more.
  3. Cut into triangles and serve.
