Sticky Chicken Wings and Drumsticks

It’s football season and chicken wings and drumsticks are the perfect traditional snack food for Sunday football games. This is an amazing recipe to serve your Nanny Kids anytime for dinner, or while watching football games, that I found on the bbcgoodfood web site. The drumsticks are sticky and delicious to eat with fingers and with plenty of napkins. Don’t use red chili if the children are sensitive to the spice.

You Will Need:

16 chicken wings and drumsticks
Red chilli sliced and spring onions, to serve

Marinade:


3 tbsp soy sauce
2 shallots , roughly chopped
2 tbsp honey
large piece ginger , finely grated
8 garlic cloves , finely grated
2 tsp chilli flakes
3 tbsp mirin

What to Do:

1. Mix all of the marinade ingredients into a mixing bowl and whisk them together.

2. Toss drumsticks in the marinade. Cover and chill for as long as you can –- overnight is good but 24 hrs is even better.


3. Preheat oven to 320 F.

4. Lay the drumsticks on a shallow roasting tray and spoon over any excess marinade from the bowl.

5. Roast the chicken for 40 mins, then baste with the sticky juices in the tin.

6. Turn the oven up to 425 F and continue to cook the chicken for 20 mins more, or until caramelized (it’s fine for it to char a little).

7. Use tongs to lift the chicken onto a platter and scatter over some sliced red chilli and spring onions, if you like.
