Greek Meatballs in Avgolemono Sauce

The children in my care love chicken meatballs. Their mother found this recipe on the Real Plans app. Be sure to let the kids help gather the ingredients, mix, and scoop the meatballs and put them on the baking sheet. I used a little less chicken broth to make less sauce for the kids and served it on white rice with a side salad.

You Will Need:

For the Meatballs:

rimmed baking sheet
parchment paper
1 1/4 small onions
1 7/8 teaspoons minced garlic
5 teaspoons dried mint
1 7/8 teaspoons dried parsley
1 1/4 pounds ground turkey or ground meat of choice (we used chicken)
1/2 teaspoon sea salt, or to taste
1/3 teaspoon ground black pepper
3 eggs
1 cup feta cheese

For the Sauce:

1/3 cup butter
1 1/4 tablespoons flour
2 1/2 cups chicken broth, or beef broth
2 eggs
2 1/2 tablespoons lemon juice
ground black pepper, to taste

What to Do:

For the Meatballs:

1. Preheat oven to 375F. Line a baking sheet with parchment paper. Peel and dice onion.

2. Add garlic, onion, mint, parsley, and ground turkey to one bowl.

3. Add salt, black pepper, and eggs to another bowl. Beat eggs and spices until smooth.

4. Add eggs to meat mixture and thoroughly combine with hands.

5. Crumble feta cheese and gently fold into mixture.

6. Roll mixture into small ping pong ball sized meatballs. Place meatballs on the baking sheet with enough space so they are not touching.

8. Bake meatballs for approximately 20 minutes.

For the Sauce:

1. Meanwhile, heat the butter in a skillet. Add the flour and whisk to combine for about 3 minutes, taking care not to burn the flour.

2. Slowly pour in broth, continuing to whisk and stir out any lumps.

3. When combined and smooth, add the meatballs and simmer for 15 minutes, until the sauce is slightly thick.

4. When the 15 minutes is almost up, separate the egg and set the white aside for another use.

5. In a small bowl, beat the egg yolk and the lemon juice together thoroughly.

6. Add a few tablespoons of the sauce, one at a time, to the egg and lemon mixture, while constantly whisking.

7. Add the egg/lemon/sauce mixture to the meatballs in the sauce, give it a quick stir, and remove from the heat.
