Herbed Pasta and White Bean Salad

This is one of the quickest pasta dishes to make for the family you work for or your own family. My Dad Boss found this recipe on the Real Plans App. Serve it cold in the warm weather and the kids will quickly gobble it up.

You Will Need:

For the Pasta:

2 cups uncooked small pasta like filini or orzo
2 cucumbers
1/2 cup chives
30 ounces cooked white beans
8 ounces goat cheese or feta cheese
1/2 cup fresh dill

For the Dressing:

1 lemon
4 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons fresh dill
3/4 teaspoon sea salt
3/4 teaspoon ground black pepper, to taste

What to Do:

1. Cook pasta according to package directions. Drain the orzo and rinse with cold water.

2. Chop the cucumbers and dice the chives.

3. In a large bowl, combine cooled orzo, white beans, cucumbers, dill, and

chives. Crumble the goat or feta cheese on top.

4. For the dressing: Juice the lemon.

5. In a small bowl, whisk together olive oil, lemon juice, garlic, dill, salt, and

pepper. Drizzle over salad and stir until well combined.

6. Serve immediately or cover and refrigerate for later.
