
Eggs make a quick, healthy, high protein meal for kids that I like serving for dinner. A frittata is an egg-based Italian dish similar to an omelette, scrambled eggs, and crustless quiche enriched with additional ingredients such as cheese and vegetables. Be sure to let the kids help crack the eggs and whisk them when preparing this recipe.
You Will Need:
6 ounces spinach
1/2 onion
1 ounce parmesan cheese
8 eggs
3/4 teaspoon sea salt, plus more to taste
1/2 teaspoon ground black pepper
1/4 cup heavy cream
2 tablespoons extra virgin olive oil
1 tablespoon minced garlic
4 ounces feta cheese
What to Do:
1. Preheat oven to 400F. Chop spinach. Peel and chop onion. Shred parmesan.
2. In a mixing bowl, whisk together eggs, salt, pepper, cream, and optional parmesan cheese; set aside.
3. Over medium heat, sauté onions in olive oil in a cast iron or other oven-proof pan until translucent.
4. Add garlic and cook another minute.
5. Add spinach and cook until just wilted and bright green in color. Spread spinach mixture evenly on the bottom of the pan.
6. Pour egg mixture evenly over spinach and onions. Crumble feta over the top of the frittata.
7. Place the whole pan in the oven and bake for 12 to 15 minutes until the frittata is nice and golden and the eggs are set. (I greased a cake pan and baked the eggs in a cake pan).
8. Carefully remove the pan from the oven. Let the frittata cool for several minutes before slicing and serving.
