Greek Orzo Pasta Salad

I am excited to share this recipe my employers asked me to make for them this week. The ingredients and flavors are fresh and healthy. The children loved helping make the orzo salad because they kept snacking on the feta cheese and tomatoes as we prepared the yummy dish.

You Will Need:

1 cup orzo pasta water
1 cucumber
1/2 red onion
1 1/2 cups cherry tomatoes
1/2 cup kalamata olives
1 tablespoon lemon juice, plus more to taste
1/2 teaspoon sea salt, to taste
1/4 teaspoon ground black pepper, to taste
4 tablespoons extra virgin olive oil
4 ounces feta cheese

What to Do:

1. Cook pasta as directed on package.

2. While the pasta is cooking chop the cucumber. Peel and finely dice red onion. Halve the cherry tomatoes. Pit and slice the olives.

3. Throw veggies and olives into a large serving bowl. Pour lemon juice over the vegetables and add salt and pepper. Combine.

4. When pasta is done, drain but don’t rinse. Pour hot pasta on top of veggies and toss to combine. Add the olive oil and toss well to allow the hot pasta to soak up the dressing. Allow salad to cool for a few minutes.

5. Add crumbled feta and toss. Taste, adjust seasonings and add more lemon juice if you prefer a zestier salad.

6. This salad is delicious served warm, at room temperature, or chilled. Enjoy!
