
If the children you care for don’t like fish this salmon recipe will change their minds. I make deep diagonal slices through the filet to help the juice to marinate the fish. I just use more fresh orange and lemon juice for bigger salmon fillets. The mother I work for taught me to broil it for 7 minutes at the end to make a crispy, dark char on the salmon that they love. This salmon makes for a great holiday main dish as well.
You Will Need:
1/2 pound to 2 pounds salmon fillet
4 1/2 teaspoons orange juice
1 1/2 teaspoons lemon juice
2 tablespoons honey
2 tablespoons extra virgin olive oil
1 pinch salt
Another tablespoon oil
What to Do:
1. Position a rack 3 inches from the heat source in the oven. Preheat the broiler to high.
2. Juice the orange to get 4 1/2 teaspoons of juice and then add 1 1/2 teaspoons lemon juice. Add 2 tablespoons of honey and 2 tablespoons of olive oil. Whisk to combine. Add the fillets of salmon and toss to coat. Let marinate for at least 5 minutes, (I marinate it all day).
3. Rub a sizzle pan, sheet pan, or broiler pan lightly with neutral oil.
4. Remove fillets from marinade, letting excess drip off — no need to pat dry. Discard excess marinade. Place the fillets skin side down on the pan. Season the flesh with salt and pepper to taste.
5. Bake at 375 for 10 minutes and then broil on high for 7 minutes.
