Chinese Noodles

I made this fragrant and delicious noodle dinner from my Mom Boss’s recipe book. I just added a lot more chicken and a lot more vegetables. I used an entire cabbage and two pints of mushrooms. I’m sure the family you work for and your own family will enjoy it as much as mine did.

You Will Need:

150 g dried noodles
8 stalks green onions
1 tablespoon soy sauce
1 tablespoon cooking wine
2 teaspoons cornstarch
1 pinch sugar
1 cup shredded cabbage
1 cup shredded carrots
1 cup shiitake mushrooms, sliced
1/2 cup chicken broth
1 1/2 teaspoons wine
1 1/2 teaspoons vinegar
1/4 teaspoon sea salt
1/2 teaspoon sugar
1 pinch ground black pepper
1 tablespoon sesame oil
1/2 pound boneless chicken thighs, cut bite sized

What to Do:

1. Bring pot of water to boil, add noodles and stir. Cook until done. Remove and drain noodles then mix with 1 Tbsp cooking oil.

2. Cut green onions into 1 in lengths.

3. Mix chicken with 1 Tbsp soy sauce, 1 Tbsp cooking wine, 2 tsp corn starch, and a dash of sugar.

4. Heat 3 Tbsp cooking oil then stir fry green onions until fragrant. Add chicken and stir fry until cooked. Remove from pot.

5. Use the remaining oil to stir fry shredded cabbage, shredded carrot, and sliced shiitake. Add chicken broth, wine, vinegar, salt, sugar and stir fry until vegetables are cooked.

6. Add noodles and stir fry to mix well, about 2 minutes.
