Parmesan Crunchy Carrots

My nanny kids love Parmesan cheese so I tried adding lots of the hard cheese to sweet carrots and the kids loved them. The salty, crunchy cheese, makes a great complement to sweet and tender carrots. The honey mustard dip is optional.

You Will Need:

1 pound carrots
olive oil spray
1/2 cup grated Parmesan cheese
1/4 – 1/2 cup shaved Parmesan cheese
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 tablespoon olive oil

Optional Honey Mustard Dip:

1/2 cup Greek yogurt
2 tablespoons honey mustard
1 tablespoons hot sauce (optional)

What to Do:

1. Preheat your oven to 425°F. Line 2 baking sheets with aluminum foil and spray very generously with olive oil spray.

2. Wash, peel, and cut carrots into bite sized sticks. If using baby carrots just split them in half lengthwise.

3. Mix grated Parmesan cheese, 1/2 tablespoon of olive oil, and seasonings in a bowl. Add carrots and mix well.

4. Place a small slice of shredded Parmesan on the well oiled baking sheet. Put a flat side of a carrot on top of the cheese. Continue placing all of the carrots on a slice of Parmesan cheese until baking sheets are filled with all of the carrots.

5. Put the baking sheets in the hot oven and cook 10-35 minutes until the carrots are tender as you like and the cheese is brown and crunchy.

6. While your carrots are in the oven, make the dipping sauce. Add the Greek yogurt, honey mustard, and hot sauce (optional) into a small bowl and combine well. Set aside.

5. Once your carrots are tender to your liking, remove them from the oven. Let them sit for a few minutes to cool off before gently removing them from the baking sheets with a spatula. You may need to peel them off of the aluminum foil.

6. Serve the crunchy, yet also naturally sweet, carrots with the dipping sauce while still warm.
