Heart-Shaped Roasted Potatoes for Valentine’s Day

Heart-Shaped Roasted Potatoes are a total win for nannies to make for children for Valentine’s Day. The kiddos will love the cute shape and the crispy edges, while nannies love how easy and hands-on the potatoes are. This is a yummy, feel-good way to celebrate Valentine’s Day with smiles at the table with very few leftovers.

You Will Need:

Large Pot
Baking Sheets
Aluminum Foil
Cooking Spray
Sharp Knife
3-6 large Russet Potatoes, washed and peeled (depending on how much you want to make!)
1/4 cup Olive Oil
2 tsp. Salt and Pepper, to taste
1/2 tsp. Garlic Powder
Fresh Parmesan, grated (optional)

What to Do:

1. Preheat oven to 400 degrees F.

2. Line a baking sheet with aluminum foil and spray with cooking spray. Set aside. (You may need two baking sheets depending on how many potatoes you use).

3. Fill a large pot with 1-2 quarts water, add 1 tsp. salt and bring to a boil, then reduce to a simmer.

4. Peel the potatoes and slice them about 1/2 inch thick. Place the potato slices into the simmering water and cook for 3-4 minutes.

5. They should be a little soft, yet still a little hard! Drain potatoes and run cold water over them to slightly cool.

6. Using a small heart shaped metal cookie cutter cut out as many hearts as you can. Place the remaining potato scraps in a bowl with water and use them to make mashed potatoes if you’d like.

7. Combine all of the remaining ingredients for the olive oil mixture except the Parmesan cheese to save the Parmesan for garnish!
Pour the olive oil mixture over the potatoes, stir and let sit for about 5 minutes.

8. Roast potatoes in oven for 22-25 minutes, flipping them over once at the half way point. If your oven has a broiler, broil the potatoes for an additional 5 minutes to get the nice golden brown color. Be sure to watch them carefully so they don’t burn!

9. Enjoy dipped in ketchup, or just with the Parmesan sprinkled on top.
